I really don't know what to call this dish. It is part frittata, part hash browns. Kamikazi whipped it up this Saturday for brunch, and the whole thing was a meal in itself.
What you need:
Four medium sized potatoes
Four eggs: beaten
Finely chopped jalapenos
Salt to taste
What you need to do:
Chop potatoes into really small pieces and fry them in at least a couple of tbsp of olive oil.
After it has browned pour the eggs and chopped jalapenos.
Add salt and stir and let it cook.
Add salsa. Stir some more.
Switch the gas off, sprinkle cheese and cover the eggs for a couple of minutes before you serve.
Ta-da. Super delicious 'thingy-gummy-bob' is ready.
Kamikazi is a genius when it comes to making egg based dishes. When I am feeling horribly uninspired he comes up with these recipes which are not only super easy to make but also incredibly delicious! Wish I could do that. Just pull out recipes from the top of my head.
This reminds me of a friend, who gave an insanely hardcore advice. She says that like every other muscle of our body, our habits need to be exercised too. Constantly. This way we stay sharp. Her example was accessorizing. Which, I think, is off the charts, when it comes to examples. And she is right. When you do something regularly and consistently, you learn from it, become good at it and by the end of it you don't even have to think about it. It just comes as easily to you as if you were born with it. And we can apply this concept to almost everything in life. What are you going to apply it to?
